<ul>

<li>Cider from Biddenden,</li>
<li>Oysters from Whitstable</li>
<li>Salt from the coastline</li>

<p>All the above are ingredients in Kent Crisps which were launched at Quex Park Estate, Birchington</p>
<p>The four flavours now on the market are</p>

<li>Ashmore cheese and onion,</li>
<li>Biddenden cider vinegar,</li>
<li>sea salt.</li>

<p>The cider vinegar is produced at Bidden Vineyards – Kent’s oldest.</p>

<p>Traditional products combined with modern marketing methods have proved a fruitful combination for North Devon cider maker Peter Hartnoll of <a href="http://www.ukcider.co.uk/wiki/index.php/Ostlers_Cider_Mill">Ostler&#8217;s Cider Mill</a></p>
<p>Peter first started producing cider at Ostlers Cider Mill in Goodleigh 17 years ago and over the years has added <a href="http://www.ukcider.co.uk/blog/apple-cider-vinegar">cider vinegar</a> and chutneys to the output from the 1,200 apple trees he planted on what was previously unused and bramble-strewn land.</p>
<p>Interest has grown steadily and the onset of<a href="http://www.ostlerscidermill.co.uk"> a website</a> has given an extra boost, with products now being dispatched nationwide.</p>

<p>To which the answer on the forum was:</p>
<p>Buy an acid testing titration kit used by winemakers.  Dilute the<br />
vinegar 1:10 with distilled or de-ionised or rain water before measuring<br />
the acid. Then multiply the result you get by 10 to bring it back to<br />
vinegar strength. If that figure is nominal tartaric acid, multiply<br />
again by 0.8 to express the value as acetic. 5% acetic is the minimum<br />
required for pickling.</p>
<p>See also the page scanned in by Andrew Lea from the Long Ashton Research Station Annual Report for the year 1917 pages 18-20 which gives some useful information about the making of <em>cider vinegar</em>.</p>
